Our Journey

Having grown up in Donegal Paul developed a passion for cooking from a very young age.

Paul moved to London to further his career as a chef, working in some of the top eateries of this city. Paul became Sir Terence Conran's youngest group head chef at Zinc.

After 9 years in London Paul moved to Dublin where he continued to work as head chef.

Paul moved to Belfast's Shu in a bid to bring his family closer to home. Following a trip to Chile Paul was inspired to research other platforms to further his passion for producing great food.

Paul said:

"The people of chile were not afraid to add stunning flavours to great cuts of beef and throw them all in a open fire pit. That freedom of eating great food outdoors appealed me as something I wanted to further explore."

Buying the trucks

Buying a 1964 Airstream in 2010 was the start of his new street food adventure. Paul and wife Elaine spent the new few months renovating it and set up the Street Food Company ‘Burger Republic’. Paul collaborated with his long term friend and butcher Richard McGreevy to develop a top end burger patty using only the finest of meat cuts.

Drawing from his culinary knowledge Paul’s aim was to bring a high end burger, dressed with the finest, freshest locally sourced ingredients to the masses.

Paul has now been working the Street Food trail for 7 years, regularly working in Dublin with his new Food Truck (renovated by himself). Burger Republic can be found 4 days a week at the lunchtime markets. These trucks have taken to the roads around Ireland, UK and France to bring street food to their huge ‘tribal’ following of great burger lovers.

Opening Tribal Burger

Paul and Elaine felt the time was right to expand their business and decided to open their new ‘bricks and mortar’ burger joint during the Autumn of 2017.

This sister company, ‘Tribal Burger’, is nestled in the heartland of Belfast’s thriving Queen’s Quarter on Botanic Avenue and is about fun dining not fine dining; Tribal Burger is a place where people can relax and enjoy a delicious quality burger alongside local craft brews, both ‘hard’ and ‘soft’ shakes, spicy chicken wings and hand cut chips.
